Gluten Free Cereal Recipe: Keto, Paleo and Whole30 Friendly

I'm on Day 21 of the ketogenic diet and am loving how much I can experiment with all of these low carb options. I was looking into alternatives for something other day eggs for breakfast and thought this could be a good option. Although, I haven't bought cereal in years, I still have the occasional bowl if it's available at my parents house or a hotel.

I love this gluten free cereal recipe because you can basically mix and match what you like. The added flax and chia seeds fortifies it with more nutrients. Toasting it a bit also adds more flavor. I've eaten this as it is, on top of yogurt, with fruit and with almond or coconut milk. It's very easy to prepare and has no added sugar.

 

Coconut, chia, flax and chopped almonds toasted in coconut oil to make gluten free cereal recipe.

 

Ingredients

  • 1 1/2 of coconut flakes
  • 1 cup of chopped almonds (or any other tree nuts)
  • 2 tbsp of flax seed
  • 2 tbsp of chia seeds
  • 1 tsp of cinnamon
 

Mix all ingredients in a large pan and toast for a few minutes. Continually stir as the coconut burns quickly. What you'll get is a crunchy, delicious snack or breakfast addition. You can add this to yogurt, with fruit or eaten with almond milk.

 

Cereal sprinkled on top of yogurt with blueberries. Low carb breakfast and no extra added sugar.

 
 

You can also roll the cereal over cream cheese and chocolate balls.
