Whole30 The Agile Way: Week 4 Retrospective

Last week done and 2 more days to go.  Doing whole30 during the week is definitely easier. Doing whole30 during the winter is also much easier.  Just the fact that it's summer and invites to barbecues are abundant, it's been a trying last week.  My husband and I went to an outdoor concert on Friday.  Perfect weather for some tunes, beer and pretzels.  Instead, we rocked out with our Rx and Epic bar.  Still a good experience, but very different.  We then celebrated Father's Day with a BBQ at my parents house.  We successfully did it, but it was probably the very first time we ever had BBQ without some Filipino staples like rice, pancit, and mango ice cream.  The best thing though was that that my parents were on board eating the healthy food. I also did not not need to take a nap right after and I didn't feel like I overstuffed myself this stuff time around.  All in all, good feelings throughout.  

What Went Well

  • Outings and dinner outside were easier as long as preparations were made 
  • Parents were on board with eating the healthier alternatives 
  • Pretty easy to do a whole30 BBQ since vegetables and meat on the grill doesn't require much. 

 

What Did Not Go Well

  • Cravings and associated feelings with food and specific events like a concert.  
  • Felt strange not having a treat and not even buying a treat for Father's Day.  No cake or sweets as such was our usual tradition.

 

What Can Be Improved 

  • Variety and food exploration was good for this week.  
  • More preparation when going out or finding myself having to eat far from home.  

 

Menu

Pork with Coffee and Spice Rub

This was my first time trying this and I just randomly mixed some spices along.  I popped this into the crock pot for 8 hours and it turned out wonderful.  It also lasted us around 2 meals plus some leftover meat for the omelettes at breakfast time.

  • 2 lbs pork butt
  • 3 tbsp grounded coffee (espresso grind)
  • 1 tsp garlic power
  • 1 tsp salt
  • 1 tsp pepper
  • 1/2 tsp paprika
  • 1/2 tsp cayenne pepper

Rub the coffee and spice mix on the pork butt.  Put the pork in the crock pot.  Don't add any water.  Let cook for around 8 hours on slow heat.  Remove from crock pot and let stand for around 10 minutes before cutting it.  

On the side for this, I roasted mix vegetables with some olive oil, salt and pepper.  Easy to do and having it on parchment paper made for easy cleanup. 

 

Clam Sauce Over Zucchini Noodles

  • 3 cans of clams (watch out for those that have sugar)(save 1/2 cup clam juice)
  • 3 tomatoes
  • 1 whole onion chopped
  • 1 clove garlic
  • Few shakes of pepper flakes
  • 1/2 tsp pepper
  • 1 tsp salt
  • 1/4 cup of apple cider vinegar

Cook everything but the clams and juice for at least 20 minutes.  It should make a light sauce. Then add the juice and the clams and continue on a slow simmer for another 10 minutes to get the flavor.  Turn off the sauce.  Add your zucchini noodles to the pot right before serving so that it doesn't over cook.  Serve from there.
